Kolache Republic was founded in 2010 by business partners Rick, Dusty and Doug with one goal in mind. They wanted to introduce Columbus to kolache using the freshest ingredients with no preservatives and sourcing locally when possible.
A kolache is a Czech pastry made of slightly sweet dough baked with a variety of fruit, nut, sweet cheese and meat fillings and are popular in areas with large Czech populations such as Texas.
Rick, a Texas native, grew up eating these tasty treats, while Dusty and Doug had both experienced the pastry while visiting the Lone Star State. One night over drinks, the three friends discussed their craving for kolache and the idea to start Kolache Republic was born. With the help of Rick’s sister-in-law, whose family owned a kolache shop in Texas, they began making kolache and have since created over 25 different flavors.
